Hungarian Pickled Gherkins

Home made pickled cucumbers/gherkins.

Big thank you for this recipe to my friend Zsike, who lives near the Danube at Budakalasz. She made this recipe many times at her home. The picture with the flowers in the back is her garden with her pickled cucumbers.

Need a 5 Litre Glass Jar.

 

Ingredients:

1.5 -2kg Medium size fresh Gherkin (cucumber)

1 bunch of fresh Dill herb

1 large whole bulb of Garlic (or 2 small)

2 Tablespoon of Salt (dissolved i water)

2-3 slices of white Bread

Water to fill the jar to cover the gherkins.

 

The Making:

 Place the first row of gherkins standing up (vertically) into bottom of a 5-litre glass jar.

Place half of the Dill and half of the peeled garlic cloves on the top. 

Place the second row of gherkins the same way and put the rest of the Dill and Garlic cloves on the top.

Dissolve 2 tablespoon of Salt in warm water and pour it on the top of the Gherkins.

Place 2-3 slices of white bread on the top.

Make sure the water covers the gherkins and the bread slices.

Close the jar with a lid.

 Place the jar outside in the sunlight. (shade ok too)

 

After 2-3 days drain the liquid (but keep the clear liquid and put it back over the gherkin’s).

Look and taste the gherkins, if they yellowish (but not yellow) colour inside, then done.

Keep jar in the fridge.
