Butter Kipfel

Crunchy on the outside, layered as its rolled up during the making, soft in the inside. Dates back to the Austro-Hungarian Monarchy. It became an everyday very popular bakery product of the people of Hungary. Sold in every bakery in Hungary to date, although commercialisation and shortened preparation time and quality of flours in use, has dramatically decreased the quality in the larger supermarket bakeries. Small micro bakeries still strive to bring the taste and quality of the original Kipfel.
Many variations exists, this recepie is for the basic Butter Kipfel.
This recepie makes 8 x 90gramm (baked) Kipfels.
Ingredients:
500g All Purpose Flour (I use Caputo Doppio Zero Flour)
10g Instant Dry yeast (use 20g Fresh yeast if available)
350g /350ml Lukewarm Milk
25-30g soft melted Butter
10g Salt
10g White Sugar / can substitute with mild taste Honey
Couple of drops of fresh Lemon Juice
Mix the milk, sugar, salt, butter, lemon juice together in a mixer or by hand.
Mix the flour with the yeast.
Gradually add the flour yeast mixture to the wet ingredients.
Combine well, i run the mixer on medium speed for 8minutes.
Take the dough out, form a round ball, and let it rise in a warm place for about 45-60minutes till doubles in size.
Then weigh the dough, divide into 8 equal pieces.
Make 8 small balls, and let them rise again on the table covered with clean kitchen towel for about 20-30min.
Then with a rolling pin, roll each ball out to a long elliptic shape.
Roll them up from the short end upwards ¼ way, then with the palm of your hand rolling outwards roll the rest up forming a kipfel/crescent shape.
Place kipfels on a baking tray covered with silicon mat or bake paper.
Let them rise for 20minutes at room temperature.
Spray the kipfels with water, and bake them in a pre-heated fan forced 220degC oven for 15-18minutes.
You may reduce the oven temperature to 200degC half way if looks like they darkening fast.
Once ready, take them out of the oven and gently spray them with a little water.
Let them cool down on a wire rack.
Cut them horizontally across, and enjoy with a variety of salami, cheese, sour cream, jam, or just dip them into your hot chocolate.
