Sour Cherry Slice

Classic dessert slice that equally acceptable on a weekday night, or at the weekend table with the extended family as an afternoon coffee or tea companion.
Can also be made with sweet (standard) cherries, but I believe its best to use sour cherries.
Ingredients:
For a 20x33cm rectangle baking tray
1 Jar (680g) pitted Sour Cherries (or use fresh - 1kg)
200g Flour
200g White Sugar
Pinch of Salt
4 Eggs
10g Baking Powder
100ml Milk
Vanilla Extract/Essence
50ml Oil (use neutral taste oil)
1 lemon zested
Separate the eggs, and beat the yolk with ¾ of the sugar.
Add the milk and the flour gradually with the baking powder, salt, vanilla, oil and lemon zest.
Beat the egg whites with the remaining sugar.
Gently fold in the egg whites with the yolks.
Place mixture into a pre-buttered dish that is sprinkled with some flour or semolina.
Put the sours cherries on the top, that have been previously sprinkled with some semolina.
Bake on 180degC for 10 min, then reduce temperature to 160degC for another 10-15min.
Check with a wooden skewer if comes out clean.
Dust with icing sugar.
