Mini Salty Challah/Kalacs

This is the smaller and saltier version of the large sweet Challah/Kalacs.

Ingredients:

600g Flour (around 12% protein)

300ml warm Milk

10g Instant Dry Yeast

1 tablespoon Sour Cream

2 Egg Yolk

60g melted butter

20g Oil / I used avocado oil

60g White Sugar

20g Salt

1 Egg yolk for brushing the top

Mix all ingredients in the mixer - add the salt and the butter and oil half way, and gradually add the flour.

Let it rise in a warm place for 45-60 minutes, till double in size.

The dough should be around 1100g, so we divide the dough into 10 even pieces, and form them into small balls. Let them rise again for 20 minutes in a warm place.

Roll them out to an approx 50cm long even string. Then perform the “single string knotting” / see YouTube clip.

Put them on an either slightly oiled baking tray or use baking paper.

Let them rest and rise again for about 20 minutes.

Bake in pre-heated 200degC oven for approx 15 minutes.

Let them rest on a wire rack till cool down.

Cut them half horizontally, and you can make a delicious sandwich using butter, salami or ham. Options are endless.
